Crispy Shrimp

Prepare the Shrimp
In a large bowl, season the peeled and deveined shrimp with salt and black pepper. Toss to coat.

Set Up Breading Station
In three separate shallow dishes, place the all-purpose flour, beaten eggs, and panko breadcrumbs.

Bread the Shrimp
Coat each shrimp in flour, shaking off the excess, then dip into the beaten eggs, and finally coat with panko breadcrumbs, pressing gently to adhere.

Fry the Shrimp
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded shrimp in batches and fry for about 2-3 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Cabbage Slaw

Combine Ingredients
In a large bowl, combine the shredded cabbage, grated carrot, sliced scallions, and chopped cilantro.

Prepare Dressing
In a small bowl, whisk together lime juice, olive oil, salt, and black pepper until well combined.

Toss Slaw
Pour the dressing over the cabbage mixture and toss well to combine. Set aside to allow flavors to meld.
