Prepare the Mixture
In a large bowl, combine the crab meat, potato flakes, egg, mayonnaise, Dijon mustard, Old Bay seasoning, salt, and black pepper. Mix gently until just combined.

Shape the Cakes
Form the mixture into small patties, about 2-3 inches in diameter. You should have around 6-8 cakes, depending on the size.

Cook the Lardons
In the same skillet used for the crab cakes, add the diced lardon and cook until crispy, about 5-7 minutes. Drain on paper towels.

Prepare the Kale
In a large bowl, massage the kale with a pinch of salt for about 2-3 minutes until it starts to soften.

Add Ingredients
To the kale, add the cooked farro, crispy lardons, diced apple, and grated pecorino cheese. Toss gently to combine.

Dress the Salad
Drizzle the dijonnaise over the salad and toss lightly to coat all ingredients.

Place the salad on a serving plate and top with the crispy crab cakes. Serve immediately.
