Preparing the Sushi Rice

Rinse the Sushi Rice
Place the sushi rice in a fine-mesh strainer and rinse under cold water until the water runs clear to remove excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.

Season the Rice
In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 20 seconds to dissolve the sugar and salt. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture while the rice is still warm. Let it cool to room temperature.
