Preheat the Oven
Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.

Incorporate Carrots
Fold in the grated carrots until evenly distributed in the batter.

Bake the Cakes
Divide the batter evenly between the two prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cakes
Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

Prepare the Filling
In a chilled mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.

Freeze the Sorbet
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. If you don't have an ice cream maker, pour the mixture into a shallow dish and freeze, stirring every 30 minutes until fully frozen.
Assembling the Cake

Layer the Cake
Once the cakes are completely cooled, place one layer on a serving plate. Spread half of the whipped mascarpone filling over the top.

Carefully place the second layer on top and spread the remaining mascarpone filling on top.

Sprinkle the grated white chocolate over the top of the cake and garnish with fresh mint leaves.
