Prepare the Dough

Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Whisk together until evenly distributed.

Cut in Butter
Add the cold, cubed unsalted butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

Add Water
Gradually add cold water, one tablespoon at a time, mixing with a fork until the dough comes together. It should be moist but not sticky.

Chill the Dough
Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Assemble the Pastries

Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Roll Out the Dough
On a lightly floured surface, roll out the chilled dough to about 1/8 inch thick. Use a sharp knife or pastry cutter to cut the dough into squares or rectangles, approximately 3x3 inches.

In the center of each pastry square, place a tablespoon of your desired jam or jelly. Be careful not to overfill.

Seal the Pastries
Fold the pastry over to form a triangle or rectangle and press the edges together to seal. You can crimp the edges with a fork for a decorative touch.

Bake
Place the pastries on the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until golden brown.

Cool and Dust
Remove from the oven and let cool on a wire rack for a few minutes. Dust with powdered sugar before serving.
