Beef Tenderloin Preparation

    Prepare the Beef

    Take the beef tenderloin out of the refrigerator and let it come to room temperature for about 30 minutes. Season generously with salt and black pepper.

    Sear the Beef

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned tenderloin and sear for 3-4 minutes on each side for medium-rare, or until desired doneness is reached. Remove from heat and let rest for 10 minutes before slicing.

Sunchoke and Potato Latke Preparation

    Prep the Vegetables

    Grate the sunchokes and potatoes using a box grater or food processor. Place them in a clean kitchen towel and squeeze out excess moisture.

    Mix Ingredients

    In a bowl, combine the grated sunchokes, grated potatoes, egg, flour, salt, and pepper. Mix until well combined.

    Fry the Latkes

    In a large skillet, heat vegetable oil over medium heat. Using a spoon, drop spoonfuls of the mixture into the hot oil, flattening them slightly. Fry for about 3-4 minutes on each side until golden brown. Drain on paper towels.

Wild Mushroom Preparation

    Sauté the Mushrooms

    In the same skillet used for the beef, melt butter over medium heat. Add minced garlic and sauté for 1 minute, then add the mixed wild mushrooms and fresh thyme. Cook for 5-7 minutes until mushrooms are tender and browned.

Bacon Preparation

    Cook the Bacon

    In a separate skillet, cook bacon slices over medium heat until crispy. Remove from skillet and drain on paper towels.

Steakhouse Sauce Preparation

    Prepare the Sauce

    In a small bowl, combine mayonnaise, ketchup, Worcestershire sauce, garlic powder, onion powder, and hot sauce. Mix well and adjust seasoning to taste.
