Tart Crust

Preheat Oven
Preheat your oven to 350°F (175°C).

Combine Ingredients
In a mixing bowl, combine the ground almonds, flour, sugar, and salt. Pour the brown butter into the dry ingredients, mixing until combined.

Bake Crust
Prick the bottom with a fork and bake for 15-20 minutes or until golden. Remove from oven and let cool.
Brown Butter Filling

Brown the Butter
In a saucepan, melt 1/4 cup of unsalted butter over medium heat until browned. Set aside to cool slightly.

Mix Sugar and Eggs
In a mixing bowl, whisk together the sugar and eggs until light and fluffy. Stir in the vanilla and almond extracts.

Add Dry Ingredients
Fold in the flour and a pinch of salt until just combined.

Bake Tart
Pour the filling into the cooled tart crust and bake for 25-30 minutes, or until the center is set.
Cider Gelee

Prepare Gelatin
Soak gelatin sheets in cold water for about 5 minutes until soft. Drain and set aside.

Combine Gelatin with Cider
Add the soaked gelatin and lemon juice to the warm cider mixture, stirring until dissolved.

Pour the mixture into a shallow dish and refrigerate until set, about 2-3 hours.
Yuzu Jam

Add lemon zest and cook for 15-20 minutes until slightly thickened.

Pour into sterilized jars and let cool before sealing.

Churn Sorbet
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a sorbet consistency.
