Prepare the Tortillas
In a frying pan, heat about 1/4 cup of cooking oil over medium heat. Warm the corn tortillas for about 30 seconds on each side until they are pliable.

Fill the Taquitos
Place a few tablespoons of shredded pork onto each tortilla, then roll them tightly. Secure with a toothpick if needed.

Fry the Taquitos
In a large frying pan, heat the remaining cooking oil over medium-high heat. Fry the taquitos in batches until they are golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Prepare the Avocados
Slice the avocados in half and remove the pit. Scoop the flesh into a mixing bowl.

Mash the Avocados
Using a fork or a potato masher, mash the avocados to your desired consistency.

Mix in Ingredients
Add lime juice, salt, diced tomatoes, chopped cilantro, and diced onion to the mashed avocados. Mix well until combined.

Taste and Adjust
Taste the guacamole and adjust seasoning if necessary, adding more salt or lime juice to taste.
