Fish Preparation

1. Clean the Fish

Rinse the sout bream under cold water and pat dry with paper towels. Remove any scales and internal organs if necessary.

2. Marinate

In a bowl, mix lemon juice, salt, black pepper, and olive oil. Rub this mixture all over the fish, including the cavity. Let it marinate for at least 30 minutes.

3. Prepare the Vegetables

Chop the garlic cloves, halve the cherry tomatoes, dice the red bell pepper, and slice the zucchini into rounds. Roughly chop the fresh parsley.

Cooking

4. Sauté the Vegetables

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the garlic and sauté until fragrant, about 1 minute. Then add the cherry tomatoes, red bell pepper, and zucchini. Cook for 5-7 minutes until the vegetables are tender.

5. Add Wine and Fish Stock

Pour in the white wine and fish stock, bringing the mixture to a simmer. Cook for another 5 minutes.

6. Cook the Fish

Gently place the marinated sout bream in the skillet with the vegetables. Cover and cook for about 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.

7. Finish with Butter

Add the butter to the skillet and sprinkle the chopped parsley over the top. Allow the butter to melt before serving.
