Method

Main Preparation

  1. 1

    Prepare the Chiles

Remove the stems and seeds from the dried ancho, pasilla, and guajillo chiles. Toast the chiles in a dry skillet over medium heat for about 2-3 minutes until fragrant. Be careful not to burn them.

  2. 2

    Cook the Onions and Garlic

In a large pot, heat the olive oil over medium heat. Add the chopped yellow onion and cook until translucent, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes.

  3. 3

    Blend the Ingredients

In a blender, combine the toasted chiles, cooked onions and garlic, chopped tomatoes, vegetable broth, peanut butter, cinnamon stick, sugar, salt, and black pepper. Blend until smooth.

  4. 4

    Simmer the Mole

Pour the blended mixture back into the pot. Bring to a gentle simmer over low heat, stirring occasionally for about 30-40 minutes. Adjust seasoning as needed.

Garnishing

  1. 5

    Prepare Garnish

While the mole simmers, chop the fresh cilantro and prepare lime wedges.

  2. 6

    Serve the Mole

Once the mole has thickened and flavors have melded, serve it hot, garnished with fresh cilantro, chopped onion, and lime wedges on the side.
