Method

Marinade Preparation

  1. 1

    Prepare the Marinade

In a large bowl, combine the ancho chili powder, guajillo chili powder, olive oil, pineapple juice, white vinegar, minced garlic, oregano, salt, black pepper, cumin, and adobo sauce.

  2. 2

    Marinate the Pork

Add the sliced pork shoulder to the marinade, ensuring all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

  1. 3

    Cook the Pork

Preheat your grill or skillet over medium-high heat. Remove the pork from the marinade, shaking off excess. Grill or sear the pork for about 8-10 minutes per side or until fully cooked and slightly charred. Let it rest for a few minutes before slicing it thinly.

Taco Assembly

  1. 4

    Prepare the Tortillas

Warm the corn tortillas on the grill or in a skillet until they are pliable but not too crispy.

  2. 5

    Assemble the Tacos

Place a generous amount of sliced pork on each tortilla. Top with diced pineapple, diced onion, and chopped cilantro. Serve with lime wedges on the side.
