Prepare the Pork
In a large bowl, season the pork shoulder with salt, black pepper, cumin, oregano, garlic powder, and onion powder. Make sure to coat the meat evenly.

Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Add bay leaves, lime juice, and water. Cover and cook on low for 8 hours or until the meat is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Set aside.

Roast the Corn
Spread the corn on a baking sheet and roast in the preheated oven for 15-20 minutes, or until slightly charred and tender.

Prepare the Chiles
Toast the dried ancho chiles in a dry skillet over medium heat until fragrant. Remove and let cool. Once cooled, remove the stems and seeds.

Chop the scallions and cilantro finely.
