Method

Preparation

  1. 1

    Prepare the Chorizo

In a skillet, heat the olive oil over medium heat. Add the chorizo and cook until browned and fully cooked, about 5-7 minutes. Use a spoon to break it apart as it cooks.

  2. 2

    Prepare the Cheese Mix

In a large bowl, combine the Chihuahua cheese and Monterey Jack cheese. Mix well to ensure the cheeses are evenly combined.

  3. 3

    Prepare the Tortillas

Warm the corn tortillas in a dry skillet over medium heat, flipping occasionally until pliable, about 1-2 minutes.

Cooking

  1. 4

    Melt the Cheese

In an oven-safe skillet, combine the cooked chorizo and cheese mixture. Spread the cheese evenly over the chorizo. Place the skillet in a preheated oven at 400°F (200°C) and bake until the cheese is melted and bubbly, about 10-12 minutes.

  2. 5

    Add Toppings

Remove the skillet from the oven. Top the melted cheese with diced tomatoes, chopped cilantro, and sliced jalapeños. Season with salt to taste.

Serving

  1. 6

    Serve the Queso Fundido

Serve the queso fundido hot with the warm corn tortillas on the side for dipping.
