Filling Preparation

    Sauté the Vegetables

    In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

    Mix the Filling

    In a bowl, combine the sautéed onion and garlic with the shredded cooked chicken and chopped cilantro. Mix well and set aside.

Salsa Verde Preparation

    Prepare the Tomatillos

    Remove the husks from the tomatillos and rinse them under cold water. Cut them in half.

    Blend the Salsa

    In a blender, combine the halved tomatillos, jalapeño (seeded for less heat, if desired), lime juice, and salt. Blend until smooth. Adjust seasoning to taste.

Assembling the Enchiladas

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Fill the Tortillas

    Warm the corn tortillas in a dry skillet or microwave until pliable. Spoon about 2-3 tablespoons of the chicken filling into the center of each tortilla, roll them up, and place seam side down in a baking dish.

    Add Salsa Verde

    Pour the salsa verde over the filled tortillas, ensuring they are well coated.

    Bake the Enchiladas

    Sprinkle the cheese over the top of the enchiladas. Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

    Allow the enchiladas to cool for a few minutes before serving. Top with sour cream and additional cilantro if desired.
