Filling Preparation

    Cook the beef

    In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add onion and garlic

    Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, around 3-4 minutes.

    Season the mixture

    Stir in the cumin, salt, and black pepper. Mix well and cook for another 2 minutes.

    Add cheese

    Remove the skillet from heat and stir in 1 cup of shredded cheddar cheese until melted. Set aside.

    Heat the sauce

    In a small saucepan, heat the enchilada sauce over medium heat. Stir occasionally until warmed through, about 5 minutes.

Assembly and Baking

    Prepare tortillas

    Preheat the oven to 350°F (175°C). In a separate skillet, heat the olive oil over medium heat and lightly fry each corn tortilla for about 30 seconds on each side until pliable.

    Fill the tortillas

    Take a warmed tortilla and spoon about 2-3 tablespoons of the beef and cheese mixture into the center. Roll the tortilla tightly and place seam-side down in a greased baking dish.

    Add sauce and cheese

    Repeat the filling process for all tortillas. Once filled, pour the warmed enchilada sauce evenly over the rolled enchiladas. Sprinkle the remaining cheddar cheese on top.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.

    Serve

    Remove from the oven and let cool for a few minutes. Serve topped with sour cream and fresh cilantro.
