Prepare the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until hot.

Cut the Tortillas
While the oil is heating, cut each corn tortilla into wedges (about 6-8 wedges per tortilla).

Fry the Chips
Once the oil is hot, carefully add the tortilla wedges in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 2-3 minutes per side.

Drain the Chips
Remove the chips with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Sprinkle with salt while still warm.

Mix the Salsa
In a medium bowl, combine the chopped tomatoes, red onion, jalapeño, and cilantro. Add lime juice and salt. Mix well to combine.

Taste and Adjust
Taste the salsa and adjust the salt or lime juice if necessary, adding more to suit your taste.

Let it Sit
Allow the salsa to sit for at least 15 minutes before serving to let the flavors meld.
