Cut and Fry Tortillas
Cut corn tortillas into triangles. Heat vegetable oil in a deep frying pan over medium heat. Once hot, carefully add the tortilla triangles in batches, frying until they are golden brown and crispy, about 2-3 minutes per batch.

Drain and Season
Using a slotted spoon, remove the chips from the oil and transfer them to a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt to taste.

Melt the Cheese
In a bowl, mix the shredded cheddar and monterey jack cheese together. You can grate the cheeses or use pre-shredded cheese. For a spicier kick, add sliced jalapeños to the cheese mixture.
Assembling Nachos

Layer the Chips
On a baking sheet or oven-safe dish, layer the fried tortilla chips evenly.

Evenly sprinkle the cheese mixture over the tortilla chips, ensuring that all chips are covered.
