Preparation

Grate the Cheese
Using a box grater, grate the Cabot Cheddar, Monterey Jack, and Pepper Jack cheeses into a mixing bowl.

Mix the Cheese
Stir the grated cheeses together until evenly combined.
Cooking

Heat the Pan
In a large skillet, heat the olive oil or butter over medium heat until melted and hot.

Assemble the Cheesadilla
Place one flour tortilla in the skillet. Sprinkle half of the cheese blend evenly over the tortilla. Top with another tortilla.

Cook the First Side
Cook for about 2-3 minutes, or until the bottom tortilla is golden brown.

Flip the Cheesadilla
Carefully flip the cheesadilla using a spatula. Cook for another 2-3 minutes on the other side, until the cheese is melted and the tortilla is golden.

Repeat
Remove the cheesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortillas and cheese blend.
Serving

Cut and Serve
Cut the cheesadillas into wedges and serve hot with salsa, sour cream, and chopped cilantro on the side, if desired.
