Preparation
Prepare the Heirloom Tomatoes
Slice the heirloom tomatoes into thick wedges and arrange them on a serving platter.
Make the Bagna Cauda
In a small saucepan, combine the garlic cloves, olive oil, and butter. Cook over low heat until the garlic is soft and fragrant, about 10 minutes. Add the anchovy fillets and cook until they dissolve into the mixture, about 5 minutes. Remove from heat and let cool slightly.
Cook the Lap Xuong
In a skillet over medium heat, cook the lap xuong until browned and heated through, about 5-7 minutes. Remove from heat and slice into thin pieces.
Prepare the Crème Fraîche
In a small bowl, stir the crème fraîche until smooth.
Chop the Fresh Herbs
Roughly chop the fresh herbs and set aside for garnish.
Assembly
Assemble the Dish
On the platter with the heirloom tomatoes, drizzle the bagna cauda over the tomatoes. Top with the sliced lap xuong and dollops of crème fraîche. Garnish with the chopped fresh herbs.
