Preparation

    Preheat Oven

    Preheat the oven to 425°F (220°C).

    Prepare Branzino

    Clean the branzino, removing any scales and innards. Pat dry with paper towels.

    Season Fish

    Season the inside and outside of the branzino with salt and black pepper. Drizzle olive oil over the fish and place lemon slices inside the cavity.

Tapenade

    Make Tapenade

    In a food processor, combine castelvetrano olives, capers, garlic, and lemon juice. Pulse until coarsely chopped.

    Blend Olive Oil

    With the processor running, slowly drizzle in the olive oil until the mixture is well combined but still chunky.

Roasting and Serving

    Prepare for Roasting

    Place the prepared branzino on a baking sheet lined with parchment paper. Top with chopped fresh parsley, thyme, and speck slices.

    Roast Fish

    Roast in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork.

    Serve

    Remove from the oven and let rest for a few minutes. Serve with the olive tapenade on the side.
