Method

Lamb Leg Steak Preparation

Marinate the Lamb

In a bowl, mix olive oil, minced garlic, salt, and black pepper. Rub this mixture all over the lamb leg steaks and let it marinate for at least 30 minutes.

Cook the Lamb

Heat a grill or skillet over medium-high heat. Grill the marinated lamb leg steaks for about 4-5 minutes on each side, or until they reach your desired level of doneness.

Summer Corn Relish Preparation

Combine Ingredients

In a bowl, combine fresh corn kernels, diced red bell pepper, chopped red onion, and cilantro. Drizzle with lime juice and season with salt to taste. Mix well and set aside.

Zhug Preparation

Blend Ingredients

In a food processor, combine fresh cilantro, parsley, chopped green chili, garlic cloves, cumin seeds, and olive oil. Blend until smooth. Season with salt to taste.

Sungold Tomatoes Preparation

Toss Tomatoes

In a bowl, combine halved sungold tomatoes with olive oil and salt. Toss gently and set aside.

Serving

Plate the Dish

On a serving platter, place the grilled lamb leg steaks, top with summer corn relish, drizzle with zhug, and serve with the tossed sungold tomatoes on the side.
