    Cook Pappardelle

    In a large pot of salted boiling water, cook the pappardelle pasta according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add the sliced onion and fennel. Cook, stirring occasionally, until caramelized, about 15-20 minutes.

    Cook Mussels

    Add the salt spring mussels to the skillet with the caramelized onions and fennel. Cover and cook until mussels open, about 5-7 minutes. Discard any mussels that do not open.

    Make the Brie Cream Sauce

    In a small saucepan, combine heavy cream and Brie cheese over medium heat. Stir until the cheese is melted and the sauce is smooth. Add minced garlic, salt, and pepper to taste.

    Combine Everything

    Add the cooked pappardelle to the skillet with mussels and vegetables. Pour the Brie cream sauce over the top and toss to combine. Sprinkle with red chili flakes and chopped parsley before serving.
