Method

Prepare Clams

    Soak Clams

    In a large bowl, soak the littleneck clams in water for about 30 minutes to remove any sand. Rinse thoroughly.

Make Tomato Broth

    Sauté Ingredients

    In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.

    Add Tomatoes and Broth

    Stir in canned diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and let simmer for 15 minutes. Season with salt and black pepper.

Cook Clams

    Add Clams to Broth

    Add the soaked clams to the tomato broth. Cover and cook for about 5-7 minutes until clams have opened. Discard any clams that do not open.

Make Garlic Herb Butter

    Prepare Butter

    In a small saucepan, melt the butter over low heat. Add minced garlic, chopped parsley, and thyme. Stir until fragrant and combined.

Serve

    Plate the Dish

    Serve the clams in the tomato broth, drizzling with garlic herb butter. Toast the sourdough bread over wood fire until golden and serve alongside.
