For the Hand Pies

Make the Dough
In a large bowl, combine flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.

Prepare the Filling
In a saucepan over medium heat, combine diced apples, brown sugar, cinnamon, and lemon juice. Cook for about 5-7 minutes, or until apples are slightly tender. Let cool.

Roll Out the Dough
On a floured surface, roll out the dough to about 1/8 inch thick. Cut out rounds using a 4-inch cutter.

Fry the Pies
In a large pot, heat vegetable oil over medium-high heat. Fry the hand pies in batches until golden brown, about 3-4 minutes on each side. Drain on paper towels.
For the Brown Butter Streusel

Make the Streusel
In a saucepan, melt butter over medium heat until golden brown. Remove from heat and stir in brown sugar, flour, and cinnamon until crumbly. Set aside.

Prepare the Ice Cream
In a mixing bowl, whisk together heavy cream, sweetened condensed milk, caramel sauce, and vanilla extract until well combined. Pour into an ice cream maker and churn according to the manufacturer's instructions. Freeze until firm.
