Prepare the Roast
Remove the prime rib roast from the refrigerator and allow it to sit at room temperature for about 1 hour before cooking.
Preheat Oven
Preheat your oven to 450°F (230°C).
Season the Meat
In a small bowl, mix together kosher salt, black pepper, garlic powder, and chopped rosemary. Rub the olive oil all over the roast and then thoroughly coat it with the seasoning mixture.
Roast the Prime Rib
Place the seasoned prime rib on a roasting rack in a roasting pan. Roast in the preheated oven for 20 minutes to develop a crust.
Reduce Temperature
After 20 minutes, reduce the oven temperature to 325°F (165°C) and continue roasting for about 1.5 to 2 hours, or until a meat thermometer reads 130°F (54°C) for medium-rare.
Rest the Meat
Remove the roast from the oven and tent it with aluminum foil. Let it rest for at least 20 minutes before carving.
Make Gravy (optional)
In the same roasting pan, add beef broth and scrape up any brown bits from the bottom. Simmer on the stovetop for about 5 minutes. Strain if desired and serve alongside the prime rib.
