Prepare the Steaks
Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This allows for even cooking.
Season the Steaks
Rub both sides of the steaks with olive oil, then generously season with salt and black pepper.
Preheat the Pan
Heat a cast-iron skillet or heavy frying pan over medium-high heat until it's very hot.
Sear the Steaks
Add the seasoned steaks to the hot pan and sear for 4-5 minutes without moving them, until a nice crust forms.
Flip and Add Aromatics
Flip the steaks and add the garlic cloves, rosemary, and butter to the pan. Cook for an additional 4-5 minutes, basting the steaks with the melted butter.

Use a meat thermometer to check for doneness. For medium-rare, aim for an internal temperature of 130-135°F (54-57°C).
Rest the Steaks
Remove the steaks from the pan and let them rest for 5-10 minutes before slicing.
