    Chop the Vegetables

    Dice the carrots, celery, onion, potatoes, and tomatoes into small, uniform pieces to ensure even cooking.

    Mince the Garlic

    Peel and finely mince the garlic cloves.

Cooking

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onions, carrots, and celery. Sauté for about 5 minutes until they start to soften.

    Add Garlic and Potatoes

    Stir in the minced garlic and diced potatoes. Cook for an additional 3 minutes.

    Add Tomatoes and Broth

    Add the diced tomatoes and vegetable broth to the pot. Stir well to combine.

    Season the Soup

    Add the dried thyme, bay leaves, salt, and black pepper. Bring the mixture to a boil.

    Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for 30 minutes, stirring occasionally.

    Finish with Fresh Herbs

    If using fresh parsley, chop it finely and stir it into the soup just before serving.
