    Prepare the Vegetables

    Slice the avocado, tomato, and red onion. If using jarred roasted red peppers, drain and slice them as well. Rinse the spinach under cold water and pat dry.

    Toast the Bread

    Toast the sourdough bread slices in a toaster or on a skillet until they are golden brown and crispy.

Assembly

    Layer the Ingredients

    On one slice of toasted sourdough bread, layer the spinach first, followed by the sliced avocado, tomato, red onion, and roasted red pepper. Sprinkle the Monterey Jack cheese evenly on top.

    Finish the Sandwich

    Top with the second slice of toasted sourdough bread. Optionally, spread chili mayo on the inside of the top slice before placing it on the sandwich.

Serving

    Slice and Serve

    Cut the sandwich in half and serve immediately with extra chili mayo on the side for dipping.
