Preparing the Thousand Island Dressing

    Make the Dressing

    In a medium bowl, combine the mayonnaise, ketchup, sweet pickle relish, vinegar, garlic powder, onion powder, salt, and black pepper. Mix well until smooth. Adjust seasoning to taste. Set aside in the refrigerator until ready to serve.

Assembling and Cooking the Reuben

    Prepare the Sandwich

    Lay out 2 slices of rye bread on a clean surface. On each slice, layer 4 oz of sliced corned beef brisket, followed by 1/2 cup of sauerkraut, and a slice of Swiss cheese.

    Top the Sandwich

    Place the remaining slices of rye bread on top of the assembled ingredients to create two sandwiches.

    Grill the Sandwiches

    Heat a skillet over medium heat and add 1 tbs of butter. Once melted, place one sandwich in the skillet. Cook for about 4-5 minutes on each side or until the bread is golden brown and the cheese has melted. Repeat with the second sandwich, adding the remaining butter.

    Serve

    Remove the sandwiches from the skillet and cut them in half. Serve warm alongside the prepared Thousand Island dressing for dipping.
