Calamari

Method

Prepare Calamari

  1. 1

    Clean and Cut Calamari

If using whole calamari, clean them by removing the head, innards, and skin. Cut the body into rings about 1/2 inch thick.

  2. 2

    Prepare Breading Station

In one bowl, mix the flour, cornstarch, salt, black pepper, garlic powder, and paprika. In a second bowl, whisk together the eggs and milk.

  3. 3

    Coat Calamari

Dip each calamari ring first into the egg mixture, then into the flour mixture, ensuring they are fully coated. Place on a wire rack to rest.

Fry Calamari

  1. 4

    Heat Oil

In a large heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C).

  2. 5

    Fry Calamari

Working in batches, fry the calamari rings for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Make Marinara Sauce

  1. 6

    Sauté Garlic

In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.

  2. 7

    Cook Sauce

Add crushed tomatoes, oregano, salt, black pepper, and sugar. Simmer for about 15 minutes, stirring occasionally. Stir in fresh basil just before serving.

Serve

  1. 8

    Plate and Serve

Serve the fried calamari hot with marinara sauce on the side for dipping.
