    Prepare the Pollock

    Season the Pollock fillets with salt and black pepper on both sides.

    Set up Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, whisk together the egg and milk until well combined. In a third bowl, place the cornmeal.

    Bread the Fish

    Dredge each Pollock fillet in the flour, shaking off any excess. Dip it into the egg and milk mixture, then coat it with cornmeal, pressing gently to ensure it sticks.

    Fry the Fish

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded Pollock fillets. Fry for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Assemble the Sandwich

    Place each fried Pollock fillet on the bottom half of an onion bun. Top with the other half of the bun.

Tartar Sauce

    Mix the Tartar Sauce

    In a small bowl, combine the mayonnaise, dill pickles, capers, lemon juice, and fresh dill. Stir until all ingredients are well mixed.

    Serve the tartar sauce alongside the fish sandwich as a dip.
