Preparing the Steak and Vegetables

    Season the Filet

    Season the filet mignon with salt and pepper on both sides.

    Cook the Steak

    Heat a skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the filet mignon and cook for about 4-5 minutes per side for medium-rare, or until your desired doneness. Remove from skillet and let rest.

    Sauté the Onions

    In the same skillet, add another tablespoon of olive oil. Slice the onion and sauté until golden brown and caramelized, about 5-7 minutes.

    Prepare Roasted Red Peppers

    If using jarred roasted red peppers, drain and set aside. If using fresh, you can roast them over an open flame or in the oven until charred, then peel and slice.

Making the Garlic Mayo

    Prepare the Garlic

    Finely mince the garlic cloves.

    Mix the Mayo

    In a bowl, mix the mayonnaise with the minced garlic and a pinch of salt. Adjust seasoning to taste.

Assembling the Sandwich

    Slice the Steak

    Once the steak has rested, slice it thinly against the grain.

    Melt the Cheese

    In the skillet, place the sliced steak back in, top with Monterey Jack cheese, and cover until the cheese melts.

    Build the Sandwich

    Spread a generous amount of roasted garlic mayo on both halves of the onion buns. Layer the melted steak and cheese, sautéed onions, and roasted red peppers on the bottom half of the bun. Top with the other half of the bun.
