Preparation of Shrimp

    Season the Shrimp

    In a bowl, season the peeled and deveined shrimp with salt and black pepper. Set aside to marinate for about 10 minutes.

Breading Process

    Prepare the Breading Stations

    Set up three shallow bowls: one with all-purpose flour, one with a whisked egg, and the last one with a mixture of shredded coconut and panko breadcrumbs.

    Coat the Shrimp

    Take each shrimp, first coat it in the flour, shaking off any excess. Then dip it in the egg, and finally, roll it in the coconut and panko mixture until fully coated.

Frying

    Heat the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium heat until hot but not smoking.

    Fry the Shrimp

    Carefully add the coated shrimp to the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

Sauce Preparation

    Mix the Sauce

    In a small bowl, combine the orange marmalade, soy sauce, and fresh lime juice. Mix well until smooth.

Serving

    Serve the crispy coconut shrimp warm, accompanied by the orange marmalade sauce for dipping.
