Method

Preparation

  1. 1

    Preheat Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four ramekins with butter and dust them with flour, tapping out any excess. Place them on a baking tray.

Making the Cake Batter

  1. 3

    Melt Butter and Chocolate

In a medium saucepan, melt the butter and chocolate chips over low heat, stirring until smooth. Remove from heat and let it cool slightly.

  2. 4

    Whisk Eggs and Sugar

In a large bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined and slightly thickened.

  3. 5

    Combine Mixtures

Pour the melted chocolate mixture into the egg mixture and stir to combine. Add the flour and vanilla extract, mixing until just combined.

Baking the Cakes

  1. 6

    Fill Ramekins

Evenly divide the batter among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft. The tops should look set.

Serving

  1. 8

    Cool and Serve

Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen, then invert onto individual plates. Serve warm with a scoop of vanilla ice cream and a dusting of powdered sugar if desired.
