Prepare the Chicken
Season the chicken breast with salt and black pepper on both sides. Dip the seasoned chicken into the flour, coating it evenly.

Breading the Chicken
In a shallow bowl, beat the egg. Dip the floured chicken breast into the egg, allowing the excess to drip off. Then, coat the chicken in breadcrumbs, pressing gently to ensure the breadcrumbs stick.

Cooking the Chicken
In a skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breast and cook for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).

Add Cheese and Bacon
In the last minute of cooking, top the chicken with shredded Monterey Jack cheese and let it melt. If using, add the cooked bacon slices on top of the cheese.

Prepare the Sandwich
Toast the sourdough bread slices until golden brown. Place the cooked chicken with melted cheese and bacon on one slice of the toasted sourdough, then top with the other slice to create a sandwich.
