Wild Rice

Method

Preparation

  1. 1

    Prepare the Chicken

Marinate the chicken breast with olive oil, salt, and black pepper. Allow it to sit for at least 15 minutes.

Cooking Wild Rice

  1. 2

    Cook the Wild Rice

In a medium saucepan, combine the wild rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes or until the rice is tender. Drain excess water if necessary.

Grilling Chicken

  1. 3

    Chargrill the Chicken

Preheat a grill or grill pan over medium-high heat. Cook the marinated chicken breast for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Glazing the Chicken

  1. 4

    Apply the Glaze

During the last 2 minutes of grilling, brush the chicken breast with your choice of glaze (teriyaki, BBQ, Korean BBQ, mesquite seasoning, or Italian herbs) and allow it to caramelize slightly.

Serving

  1. 5

    Plate the Dish

Serve the chargrilled chicken breast on a bed of wild rice. Drizzle with any remaining glaze if desired.
