Preparing the Catfish Bites

Prepare the Catfish
Rinse the catfish fillets under cold water and pat dry with paper towels. Cut the fillets into bite-sized pieces.

Set Up Breading Station
In one shallow bowl, place the flour mixed with salt, black pepper, and cayenne pepper. In a second bowl, whisk together the eggs and milk. In a third bowl, place the cornmeal.

Heat the Oil
In a large skillet or deep fryer, heat the oil over medium heat until it reaches 350°F (175°C).

Fry the Catfish Bites
Once the oil is hot, carefully add the breaded catfish pieces in batches. Fry for about 3-4 minutes per side until golden brown and cooked through. Remove and drain on paper towels.
Making the Tartar Sauce

Combine Ingredients
In a medium bowl, combine the mayonnaise, finely chopped pickles, lemon juice, capers, Dijon mustard, salt, and black pepper.

Mix Well
Stir all the ingredients together until well combined. Adjust seasoning to taste.
