Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Set Up Breading Station
In a shallow bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. In another bowl, whisk together the egg and milk until well combined.

Bread the Calamari
Dip each calamari ring first into the egg mixture, allowing excess to drip off, then dredge in the flour mixture until fully coated. Set aside on a plate.

Heat Oil
In a large heavy-bottomed pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, frying for about 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, salt, black pepper, fresh basil, and red pepper flakes. Bring to a simmer.

Simmer Sauce
Reduce heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning to taste.
