    Prepare the Beef

    Begin by seasoning the grass-fed beef with salt and black pepper on all sides. In a large skillet, heat olive oil over medium-high heat.

    Sear the Beef

    Add the seasoned beef to the skillet and sear for about 3-4 minutes on each side until browned. Remove the beef from the skillet and set aside.

    Sauté Garlic and Rosemary

    In the same skillet, add minced garlic and chopped rosemary. Sauté for about 1-2 minutes until fragrant.

    Add Broth

    Pour in the beef broth and stir well, scraping the bottom of the skillet to incorporate all the flavorful bits.

    Return the Beef

    Place the seared beef back into the skillet. Cover and let it simmer on low heat for about 15-20 minutes, or until the internal temperature reaches your desired doneness.

    Prepare the Vegetables

    While the beef is simmering, in a separate pan, heat a little olive oil over medium heat. Add the vegetable stir-fry mix and sauté for 5-7 minutes until they are tender but still crisp.

    Flavor the Vegetables

    Add soy sauce and sesame oil to the vegetables, stirring well to combine. Cook for an additional 2 minutes.

    Once the beef is cooked to your liking, slice it against the grain. Serve over a bed of cooked quinoa with the sautéed vegetables on the side.
