Preheat your smoker to 225°F (107°C). Slice the mini sweet peppers in half lengthwise and remove the seeds.

In a mixing bowl, combine cream cheese, cheddar cheese, garlic powder, onion powder, black pepper, and smoked paprika. Mix until well combined.

Stuff the Peppers

Spoon the cheese mixture into each half of the pepper, filling them generously.

Wrap with Bacon

Take a slice of bacon and wrap it around each stuffed pepper, securing with a toothpick if needed.

Smoke the Peppers

Place the bacon-wrapped peppers on the smoker grates and smoke for about 1.5 hours, or until the bacon is crispy and the peppers are tender.
