Prepare the Ribs
Preheat your oven to 300°F (150°C). In a bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, and brown sugar. Rub this mixture all over the ribs.

Cook the Ribs
Place the ribs in a baking dish or on a baking sheet lined with aluminum foil. Cover tightly with foil and bake for 2.5 to 3 hours until tender.

Make the Barbecue Sauce
In a saucepan over medium heat, combine bourbon, brewed coffee, ketchup, apple cider vinegar, Worcestershire sauce, honey, mustard, smoked paprika, and cayenne pepper. Bring to a simmer and cook for 15-20 minutes until slightly thickened.

Prepare the Potato Salad
Boil the cubed potatoes until tender, about 10-15 minutes. Drain and let cool. In a large bowl, mix mayonnaise, Dijon mustard, celery, red onion, hard-boiled eggs, salt, black pepper, and parsley. Add the cooled potatoes and mix well.

Slice the ribs and serve hot with a side of potato salad.
