1. Prepare the Garlic Aioli

In a small bowl, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper. Mix well until smooth. Set aside.

2. Prepare the Potatoes

Peel the Kennebec potatoes and cut them into thin strips (about 1/4 inch thick). Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

3. Dry the Potatoes

Drain and pat the potato strips dry with paper towels to remove moisture.

4. Heat the Oil

In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

5. Fry the Potatoes

Carefully add the dried potato strips to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels.

6. Serve

Sprinkle the hot fries with shaved parmesan cheese and serve immediately with the garlic aioli on the side.
