Prepare the Potato Rosti

Grate the Potatoes

Peel and grate the russet potatoes. Place them in a clean kitchen towel and squeeze out excess moisture.

Season and Form Rosti

In a bowl, combine grated potatoes, salt, and pepper. Shape into patties.

Cook the Rosti

Heat olive oil in a skillet over medium heat. Cook the potato patties until golden brown and crispy, about 4-5 minutes on each side. Set aside.

Caramelize the Onions

Sauté Onions

In a skillet, melt butter over medium heat. Add sliced onions and cook until soft.

Add Sugar and Salt

Stir in brown sugar and salt. Continue cooking until onions are caramelized and golden, about 15-20 minutes. Set aside.

Make the Chimichurri

Blend Ingredients

In a food processor, combine parsley, garlic, red wine vinegar, olive oil, red pepper flakes, and salt. Pulse until finely chopped and well mixed.

Cook the Eggs

Sunny Side Up

In a non-stick skillet, melt butter over low heat. Crack the eggs into the skillet and cook until the whites are set, about 3-4 minutes.

Assemble the Hash

Layer the Ingredients

On a plate, place a potato rosti, top with pulled pork mixed with BBQ sauce, caramelized onions, and a sunny side up egg.

Drizzle with Chimichurri

Finish by drizzling chimichurri over the top. Serve immediately.
