    Prepare the Chicken

    Preheat your grill to medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper. Grill the chicken for about 6-8 minutes on each side, or until cooked through and juices run clear. Remove from grill and let rest.

    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove and drain on paper towels.

    Prepare the Eggs

    In a pot, bring water to a boil and gently add the eggs. Boil for 6 minutes, then transfer the eggs to an ice bath to stop the cooking process. Once cooled, peel and set aside.

    Assemble the Salad

    On a large plate, slice the grilled chicken and layer it with torn mixed herbs, diced red onion, crumbled blue cheese, and the crispy bacon. Halve the boiled eggs and place them on top.

    Drizzle with additional olive oil if desired and serve immediately.
