Prepare the Crostone
Preheat the oven to 400°F (200°C). Slice the baguette into 1-inch thick slices. Arrange on a baking sheet and brush both sides with olive oil. Bake for about 10-12 minutes or until golden and crispy.

Prepare the Fruit Compote
In a small saucepan over medium heat, add the seasonal fruit and honey. Cook for about 5-7 minutes until the fruit softens and releases juices. Remove from heat and stir in fresh mint. Season with salt and black pepper to taste.

Assemble the Crostone
Spread a generous layer of fresh ricotta cheese on each toasted baguette slice. Top with a slice of prosciutto and a spoonful of the fruit compote. Drizzle with additional olive oil if desired.

Serve
Arrange the crostones on a serving platter. Optionally garnish with extra mint leaves. Serve immediately.
