Gelato Preparation Steps

    Prepare the Base

    In a saucepan, combine the milk, heavy cream, and sugar. Heat over medium-low heat until the sugar dissolves and the mixture is warm, but not boiling.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and thick. Gradually add a small amount of the warm milk mixture to the yolks, whisking constantly to temper them.

    Combine Mixtures

    Pour the tempered yolk mixture back into the saucepan with the remaining warm milk mixture. Cook over medium heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon (about 5-7 minutes).

    Cool and Flavor

    Remove from heat, stir in the vanilla extract and a pinch of salt. Allow the mixture to cool completely before refrigerating for at least 4 hours or overnight.

    Churn the Gelato

    Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
