Prepare the oven and baking pan
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

Make the cake batter
In a large bowl, whisk together flour, baking powder, baking soda, and salt. In a separate bowl, cream the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, then mix in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with buttermilk, and mix until just combined.

Prepare the persimmons
In a small bowl, toss the sliced persimmons with brown sugar. Let them sit for about 10 minutes to caramelize slightly.

Assemble the cake
Pour half of the cake batter into the prepared pan, layer the caramelized persimmons on top, then pour the remaining batter over the persimmons. Use a spatula to smooth the top.

Bake
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Make the Maple Chantilly
While the cake is baking, whip the heavy cream in a bowl until soft peaks form. Gradually add maple syrup and continue whipping until stiff peaks form.

Serve
Allow the cake to cool for a few minutes before transferring it to a wire rack. Serve slices of the cake topped with Maple Chantilly.
