Chicken Cordon Bleu

    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness.

    Assemble

    Lay a slice of ham and a slice of Swiss cheese on each chicken breast. Roll the chicken tightly and secure with toothpicks.

    Coat the Chicken

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dip each rolled chicken in flour, then egg, and finally breadcrumbs.

    Cook

    In a skillet, heat olive oil over medium heat. Cook the chicken rolls until golden brown on all sides, about 4-5 minutes. Transfer to a baking dish and bake in the preheated oven for about 20-25 minutes.

Whipped Potatoes

    Cook the Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

    Whip the Potatoes

    Drain the potatoes and return to the pot. Add butter, milk, salt, and pepper. Mash and whip until smooth and creamy.

Mushroom Gravy

    Sauté the Mushrooms

    In a saucepan, melt butter over medium heat. Add sliced mushrooms and sauté until golden brown.

    Make the Gravy

    Sprinkle flour over the mushrooms and stir to combine. Gradually add chicken broth, whisking until smooth. Simmer until thickened, about 5-7 minutes. Season with salt and pepper.
