Combine Ingredients
In a large mixing bowl, combine the diced apples, grated ginger, and ground cinnamon.

Add Sugar
Sprinkle the brown sugar over the apple mixture and stir well to combine. Let it sit for about 30 minutes to allow the apples to release some juices.

Add Vinegar
After 30 minutes, add the apple cider vinegar to the mixture. Stir everything together until the sugar is fully dissolved.

Strain and Store
Using a fine mesh strainer, strain the mixture into a clean glass jar or bottle. Press down on the solids to extract as much liquid as possible. Discard the solids.

Refrigerate
Seal the jar and refrigerate the shrub for at least 24 hours to allow the flavors to meld. It can be stored in the refrigerator for up to a month.
