Method

Preparation

  1. 1

    Prepare the Marinade

In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, black pepper, and dried dill to create the marinade.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes in the refrigerator.

  3. 3

    Prepare the Vegetables

While the salmon is marinating, wash and trim the asparagus. Cut the zucchini into thick slices and halve the cherry tomatoes.

Grilling

  1. 4

    Preheat the Grill

Preheat your grill to medium-high heat (around 375°F - 400°F).

  2. 5

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 6-8 minutes per side or until the salmon flakes easily with a fork.

  3. 6

    Grill the Vegetables

Place the asparagus, zucchini slices, and cherry tomatoes on the grill. Grill for about 4-5 minutes, turning occasionally, until they are tender and have grill marks.

Serving

  1. 7

    Serve the Dish

Once the salmon and vegetables are grilled, remove them from the grill and let them rest for a couple of minutes. Serve the grilled salmon alongside the seasonal vegetables.
